1 large red pepper1.5 tbsp Extra Virgin Olive OilSalt to tastePepper, black to taste1 tsp Garlic
Makes 4 servings
- Preheat broiler
- Place red pepper on a foiled cookie sheet
- Broil until brown and skin of pepper looks wilted - around 15- 20 minutes
- cool to room temp
- peel and deseed the pepper
- cut into strips
- place in bowl and toss with remaining ingredients
- cover and refrigerate a minimum of 5 hours
