Baked Creamy Chicken Taquitos

3oz light cream cheese1/4 salsa1 tbsp lime jucie1 tsp chili powder1/2 tsp onion powder2 cloves garlic, minced3 tbsp cilantro, chopped2 tbsp green onions, sliced2 cups shredded chicken1 cup 2% shredded cheese16 corn tortillas
preheat oven 425, in a large bowl, mix cream cheese, salsa, lime juice, cumin, chili powder, onion powder, and garlic. stir in cilantro and onions. add chicken and cheese, mix thoroughly. Warm tortillas so they will be easier to work with. Spoon 2-3 tbsp of mixture onto tortillas, roll as tightly as you can. spray tops lightly with cooking spray and sprinkle with salt. bake 15-20 minutes until crisp and golden. these can be frozen before baking. bake at 425 for 20-25 minutes if frozen.

We just made these for dinner- they were fantastic! I used yogurt instead of cream cheese, just because that's what I had, but it turned out great. There are several recipes like this on spark, but I like this one because it's the only one with the small corn tortillas like the ones I used. - 4/24/12
