Cream Cheese Potato Soup

Ingredients
3 medium red potatoes (with or without peel)1 tsp. onion powder1 tsp. garlic powder1/2 tsp. salt1 tbls. fresh minced parsley1/2 tsp. pepper1/4 cup diced celery4 oz. fat free cream cheese
Directions
Grate potatoes with a large cheese grater or food processor. Place in medium saucepan and cover with water. Bring to a boil and add all ingredients except cream cheese. Continue boiling on low heat until potatoes are tender.

Add cream cheese and stir until melted. Makes about 3 1-cup servings.
*Hint* If the soup needs to be thicker, add instant mashed potatoes.

Other variations:

Omit the parsely and add ground rosemary.

For a heartier soup, you could add chopped up lean ham.

    I used a sweet potato and 2oz of FF cream cheese to make one serving and added some corn and broccoli. It was good but would have liked it to be a bit thicker and saltier. Guess I need to work on it a bit lol. Very filling! - 4/7/09
