Fluffy Sweet Potatoes

4 carrots, peeled and cubed3 lb. sweet potatoes, peeled and cubed2 chicken bouillon cubes6 tbsp margarine or margarine substitute1/4 cup brown sugar2 tbsp fresh juice, in any flavor1 tsp pumpkin pie spicesalt and pepper to tasteGranola, for garnish
In stock pot place carrots, sweet potatoes, chicken bouillon cubes and cover with water.
Bring to a boil and simmer until vegetables are very tender about 20-25 minutes.
Drain leaving 1/3 cup of the cooking liquid.
Transfer to a blender or use hand mixer etc.
Add brown sugar, juice, pumpkin pie spice , salt and pepper. Whip until mixture is light and fluffy.
Serve or freeze in bags or casserole dish.
You can freeze for up to 6 months.
To cook after freezing thaw, preheat oven to 350*F, cover and bake for 35 to 40 minutes. After baking I turn it into a dessert and add granola for a little crunch on top!

I can see adding the carrots to the sweet potatoes, and I make mine with some chicken stock and spices and whip them,but I can't see adding the br. sugar - to me sweet potatoes have enough flavor & sweetness on their own plus the carrots will add some some sweetness and who needs the extra calories - 2/7/09

Made this last night & we loved it! I suggest starting the carrots first though, as I used a mixer and had pcs of carrot- which was fine- if you care. Also, add more pie spice. This made WAY MORE than 8 servings! There was 4 of us last night, & we could eat this at least twice more to finish it. - 5/12/09
