Salmon Cakes

Ingredients
12oz Salmon fillet, cooked2 Egg whites (whisked)1 medium carrot, grated1/2 medium onion1/2cup whole wheat bread crumbsYour favourite seasonings
Directions
Cook the salmon fillet
Peel and chop the onion, set aside
Peel and grate the carrot, set aside
Combine all ingredients and form into patties

Heat a medium skillet and add a little extra virgin olive oil

Cook salmon patties about 3-5 minutes per side or until lightly browned.

Serving Size: makes approx 5-6 patties, depending how big you make them
