Salmon Loaf

Ingredients
1 can salmonSliced mushrooms3 oz neufchatel cheese3 raw eggs1/4 cup Italian bread crumbs
Directions
Preheat oven to 350. Spray cooking spray on bottom and sides of loan pan. Drain canned salmon and fluff with fork. Add 3 medium raw eggs, 1/4 cup bread crumbs, 3 oz neufchatel cheese, and a few sliced mushrooms. Mix well, then put into pan. Sprinkle a light layer of bread crumbs on top. Bake at 350 for 45 minutes.

Serving Size: Makes 6 servings in loaf pan
