Gluten Free Waffles

Ingredients
3 eggs, separated4-6 T canola oil 1-1/2 cup milk1/2 cup potato starch,1/2 cup rice flour1/2 cup sorghum flour2 t baking soda1 T cinnamon1 t salt2 T sugar
Directions
Start waffle iron heating.
Separate 3 eggs, and whip egg whites to form peaks.
To yolks, add oil and milk to make 2 cups of liquid.
In another bowl, combine 1/2 cup each of potato starch, rice flour, and sorghum flour. Add baking soda, cinnamon, salt, and sugar and stir.
Whip in the wet ingredients. Let stand for 2 minutes, then fold in the egg whites.
Cook per your manufacturer's directions in your waffle iron.
Top with bananas, strawberries, or our favorite, maple syrup.
