.75lbs chicken breasts, skinless/boneless .75 green bell pepper sliced.5 red bell pepper.75 sweet onionMarinade:.5 scallions,2T lime juice1.5 garlic cloves, minced1.5 T cilantro fresh, minced (or 1/3 + t corriander).5 teaspoons vegetable oil1/2 teaspoons red pepper flakes1/4 teaspoon cumin ground1/4 t salt1/4 t pepper4 tortillas toppings optional
1. Cut chicken diagonally in 1 " thick strips.
2. Prepare marinade by whisking the marinade ingredients.
3. Marinate for 1-6 hours.
4 . Saute the peppers and onions.
5. Broil the chicken about 6 inches from the heat until firm to the touch about 5 minutes. OR George
Foreman grill 350 4 minutes per side. (Don't drain)
6. Warm tortillas by heating on paper towel for 15 seconds in the microwave.
