Slow Cooker Bourbon Street Chicken

Ingredients
6 frozen chicken thighs1 clove garlic, chopped (or 1 tbsp. granulated garlic)1/4 tsp. ground ginger1/4 c. apple juice1/4 c. packed light brown sugar2 tbsp. ketchup1 tbsp. cider vinegar1/2 c. water1/8 c. soy sauce
Directions
Place frozen chicken thighs on bottom of crock pot. Combine remaining ingredients and pour over chicken. Cook 8 hours on low, then shred chicken in the slow cooker to a "pulled pork" consistency. Ladle over a bowl of brown rice or place atop a whole-grain bun. (Not included in Nutrition Facts).

    I give this recipe 5 stars! I used 6 skinless breasts instead of the dark meat. Everyone commented on how wonderful it smelled while it was cooking and they couldn't wait to dig in. I served it on a bun and also have eaten it on a whole wheat pita. It is juicy and delicious. - 6/25/13

    I cooked brown rice and added about 30 min before done and the rice soaked up water making it all come together

    This was excellent. Even sent out to other friends who love their slow cookers. Only concern, next time I will add a little cornstarch to the water because the sauce came out liquidy. I also will add some sweet onion next time. Chicken was tender and had great flavor! - 4/14/13

    Hours, added a little cornstarch for thickening.
    It was very good. Served over quinoa and a salad.

    I used boneless, skinless chicken thighs.

    This was wonderful! I used 3 nice, plump skinless, boneless chicken breasts and it reached the 'pulled pork' consistency after 6 hrs on low. I poured the juice in a saucepan and boiled with 1 T cornstarch mixed with 1 T water until sauce thickened slightly. Then I poured sauce back over shredded chi - 9/29/15

    just put this in the crock pot for dinner...doubled the sauce going to add a bit of cornstarch to thicken it later will have with rice & steamed broccoli...I might even make a salad today to go with dinner. Thanks for the dinner idea.
