Creole Sausage and Chicken with Rice

Aidells Cajon style andouille sausage, 2 4oz sausages, sliced6 oz chicken tenderloin (boneless, skinless), cut in bite size pieces1 8 oz package saffron yellow rice, spanish style1 can ready cut diced tomatos1 can black beans, rinsed and drained3/4 cup chopped onion, large dice1/2 red bell pepper, diced2 cloves garlic, crushed1 tsp creole seasonongolive oil
Cook the rice according to package instructions.
Saute onion and pepper in 1 tsp olive oil for 1 - 2 minutes, remove from pan.
Saute chicken in 3 tsp olive oil until done, remove from pan.
Add sausage to pan and brown on both sides. Add garlic and saute for 30 seconds. Add tomatoes, water, chicken, onions,and peppers, Stir. Add cooked rice and mix well. Add seaoning to taste. Cook ver low heat for another 10 minutes.
Serving Size: makes 5 large servings
