Spinach & Salmon Quiche

Ingredients
1 tbsp Olive oil1/2c Red onion, diced1/2c Orange bell pepper, diced2c Spinach, raw or thawed & drained1/2tsp Salt1/2tsp Black pepper1/4tsp Nutmeg16oz Greek yogurt, plain4 Eggs8oz Mozzarella, grated4oz Smoked salmon, such as Coho or Sockeye1 9" Pie crust*
Directions
Saute onion, pepper in olive oil until partly soft. Add spinach and continue to cook, stirring frequently, and let water cook off. Add 3 seasonings and remove from heat.

Mix yogurt, eggs and mozzarella - I play with the amounts quite a bit so try more or less of each to your taste. Add chopped smoked salmon and blend evenly. Stir in cooled spinach/onion mixture till blended.

Pour into 9" pie crust and back at 350F for 1 hour.
