Salmon Salad Spread

Even though I don't always use Best Foods in this recipe I did add it to this one. Many times I'll just use a Tbsp of really good EVOO (Spanish olive oil is really good too)2 - 6 oz cans of Salmon (no bones no skin)1 - small onioncapersLemon zest (add some juice if you want too)Mayo or Olive OilSometimes I do add 1-2 celery stalks
Key to this is to mince or grade the juice out of the onion
it takes very little to make a huge difference.
Fresh zest lemon is the best of all choices.
Add it all to a bowl and mix...chill for 1 hour to really marry the flavors but not a must :)
