Onions, raw, 1 cup, choppedYellow Peppers (bell peppers), 1 pepper, large (3-3/4" long, 3" dia) Louis Rich Turkey Bacon (1 slice), 2 serving *Albertsons Yellow Squash (Sliced), 2 cup *(V) Squash, Zucchini, raw, 2 cup *Eggplant, Raw - 1 Cup Cubes (82g), 1 cup *Oil Bertolli Extra Light Olive Oil 1 tbsp, 3 serving *Holland House Marsala cooking wine, 2 tbsp Tomato, grape (3oz = appro 12 tomatoes), 3 oz
chops all vegetables like french fries, and cut bacon into small bit size pieces. peel eggplant before cutting into fries. Take a large fryer pan and add oil . heat pan on med heat.
First add bacon and cook for about 5 minutes to make a little crisp.
Now add all the vegetables to the bacon and oil and cook together for 15 more minutes. now add seasoning and wine. heat for about 5 more minutes. Then serve on a bed of rice.
