Low Fat Sour Cream Chicken Enchiladas

4 Skinless chicken breasts (about 1 pound), cooked and shredded1 can Ro-Tel, drained1 can 98% fat free Cream of Chicken soup1 Cup Fat Free shredded cheddar1 Cup fat free shredded mozzarella16 corn tortillas1 16 oz. container sour cream (2 cups)1 can skim evaporated milk
Preheat oven to 350 degrees.
Combine chicken, soup, Ro-Tel, cheeses, and 1/2 can of milk. Spoon in equal amounts into tortillas and roll. Place tortillas seam side down in baking dish.
Combine remaining milk and sour cream. Pour over tortillas. Bake at 350 degrees for 20-25 minutes.
Serving size: 2 tortillas, Yields 8 servings.
