Collard & Kielbasa Soup

4 c chopped collard greens1 sm onion chopped1 stalk of celery chopped4 cloves of garlic minced1/4 c sweet peppers chopped1/2 tbl butter1 tsp olive oil8 oz low fat turkey kielbasa1 1/4 c water1 c low sodium chicken broth3/4 c sweet potato cubed3/4 c white potato cubedSalt & Pepper to taste
Bring kielbasa and water to a boil, then turn down to simmer for about 15 minutes.
Add potatoes and chicken broth and cook for 10-15 more minutes (until potatoes are mostly cooked).
Add greens and cook for 15 - 20 minutes (until soft and sunken into juice). While greens are cooking saute onions, celery and peppers for about 5 minutes then add garlic and saute about 2 more minutes.
Add saute to soup and cook for about 15 more minutes.
Add some salt and pepper and voila! Your done!
