Chicken & Broccoli Goodness

Ingredients
Broccoli (1# frozen "steamer" bag)Chicken Breasts, boneless/skinless, 1#Mushrooms, sliced, 8oz packageQuinoa, 2 cups cooked ahead of timeTeriyaki sauce, 2 tbsp
Directions
Trim the chicken of fat and cut into small bite sized pieces. Steam the broccoli in the microwave for a minute or so less than instructions.
In a large skillet over medium heat add mushrooms, let them cook about 2 minutes until they start to release moisture and add chicken*. Increase temperature to med-high and cook additional 3-5 minutes until chicken is cooked through (the smaller the pieces the faster it cooks). Add broccoli and cook until heated through, 1-2 minutes. Add Teriyaki sauce. Serve with 1/2 cup quinoa.


Serving Size: Makes 4 servings (1 3/4 cup) plus 1/2 cup of quinoa
