Thai Butternut squash and green beans

Ingredients
400ml stock200ml coconut milk2Tbsp green thai paste1 chopped onion (or shallots)2 crushed garlic cloves1kg cubed butternut squash400gm green beans300gm cherry tomatoes, halved1 Tbsp coriander or three fresh
Directions
place 400ml stock,200ml coconut milk, 2Tbsp green thai paste in pan to boil to blend.
add the vegetables
1 chopped onion (or shallots)
2 crushed garlic cloves
1kg cubed butternut squash
400gm green beans
and cook for 20 minutes on gentle boil
add the rest
300gm cherry tomatoes, halved
1 Tbsp coriander or three fresh
cook for a further 5mins, serve steaming!
