Paleo/ Low Carb Banana Bread

Ingredients
WET:2 medium bananas, mashed4 eggs1/4 cup melted butter or coconut oil2 tsp. brown sugar plus 1 tsp. splenda, or 1 tbsp. honeyDRY:1/2 tsp. salt1 tsp. baking powder3/4 cup coconut flour1 tsp. cinnamon
Directions
Combine the wet ingredients, except the butter, in a blender. Blend at low speed for 1 minute while drizzling in the melted butter/oil.

Place all the dry ingredients in a bowl and mix. Pour the wet ingredients on top and mix with a rubber spatula until thoroughly combined. When the coconut flour fully absorbs the liquid, the batter will thicken a lot and become the consistency of mashed potatoes.

Use an ice cream scoop to portion the muffins.

Bake at 350 for 17-20 minutes, or until a toothpick comes out almost completely clean. OR, pour into a greased loaf pan and bake for 45 minutes.

    Very easy to make and came out perfect, moist and not overly sweet. I modified by adding minced apples, peanut butter, dried cranberries and dark chocolate chips. I used Stevia instead of the other suggested sweeteners . And I made them into 24 mini muffins. - 3/8/15

    it was easy enough but not that tasty...next time I added some walnuts maybe a minced apple like the last person did.. - 4/26/17
