Lentil Quinoa and Pinto Bean Soup

1 Tbsp Olive Oil1 Onion, chopped1 green onion, chopped1 Celery Stalk, chopped2 cloves garlic, more if you like1 tsp Thyme1 tsp Sage1/2 Cup green lentils1/2 cup Pinto Beans1/2 cup Quinoa2 cups low sodium chicken broth (or use vegetable broth)
place beans and lentils in about 4 cups of water, bring to a boil and cook 30 minutes to soften beans. Add chicken broth and quinoa and spices and continue cooking. Meanwhile, in a saucepan, heat the olive oil, add the vegetables to saute until softened. Add the vegetables to the soup and cook on medium low heat for 20 minutes to combine flavors. Add more water as necessary.
