Strawberry Cheesecake Pie

Ingredients
2 whole graham crackers (low fat)1 TBS butter, melted1/2 c mashed strawberries (about 1/2 a pint)1.5 TBS corn starch1/2 c sugar1/4 c water4 oz light cream cheese2 TBS powdered sugar1/2 tsp lemon juice2 diced strawberries
Directions
Crush graham crackers in a ziploc bag. Combine with melted butter and mix well. Divide mixture evenly between 2 (or 4) ramekins and press to form a crust on the bottom. Refrigerate until firm.

Mash 6-8 strawberries (should yield 1/2 c) and place in small saucepan. Combine granulated sugar & corn starch. Add to saucepan with water and cook, stirring constantly, on medium heat until just boiling. Boil one minute more and remove from heat to cool.

Whip cream cheese, powdered sugar, and lemon juice until combined. Fold in diced strawberries.

Evenly divide cream cheese mixture between the 2 ramekins. Top with slightly cooled strawberry topping. Garnish with additional strawberries if desired and refrigerate at least 1 hour.
