King Ranch Chicken Casserole

Ingredients
1 can cindensed cream of mushroom soup (98% fat free)3/4 cup salsa3/4 cup sour cream1 tbsp chlil powder2 medium tomatoes, chopped (about 2 cups)3 cups cubed chicken (or turkey)12 corn tortillas cut into 1 inch pieces1 cup shredded cheddar cheeseGreen onion for garnish
Directions
1. Mix the first 6 ingredients together in a bowl.
2. In a 2 quart shallow baking dish arrange 1/2 of the tortilla pieces. Top with half of the chicken mixture. Repeat layers. Sprinkle with cheese.
3. Bake at 350 degrees for 40 minutes or unitl hot. Serve with additional salsa and garnish with green onions.

    This is a great comfort-food recipe! I didn't have fresh tomatoes on hand, so substituted a can of ro-tel for them and the salsa. I think it turned out very similar to what this recipe would taste like. We serve ours over a bed of shredded romaine lettuce. - 11/19/10
