Whole Wheat Pasta Casserole

Ingredients
1 bell pepper, cut into 1 inch pieces1/2 red onion, cut into 1 inch pieces1 tsp of garlic, chopped4 Tlsp olive oil1 lg can tomatoes1 sm can tomato paste1/2 cup of red wineitalian seasonings2 bay leaves1 tsp dried basil3 cups cooked whole wheat pasta2 cups mozzarella cheese, divided
Directions
Cook pasta in boiling salted water according to package directions. In large skillet, heat olive oil and add pepper, onion, bay leaves and garlic, stir over medium heat until vegetables are just starting to become tender. Add italian seasonings to taste and basil. Stir in tomatoes and tomato paste with wine. Bring to boil and simmer about 5 minutes. Drain pasta, and mix it with tomato sauce and 1 cup of cheese in large mixing bowl. Pour into a greased shallow baking dish, cover with foil and cook in 350 degree oven for 30 minutes. Remove foil and add remaining 1 cup of cheese to top and put back in oven for 5 more minutes. Serves 6
