Paleo Coffee Cake

1 cup almond butter2 eggs1/3 cup golden flax meal1/2 cup almond or coconut milk (I use almond)1/3 cup xylitol or equivalent sweetener (stevia, honey, dates, etc. I used stevia)2 tsp vanilla1/3 cup coconut flour or unsweetened shredded coconut1/4 tsp baking powder1/4 tsp salt2 tsp cinnamon
Preheat oven to 350*, prepare an 8x13" baking pan with coconut oil or butter.
With a hand blender or in a food processor, mix almond butter, eggs, flax, sweetener, vanilla, and milk together. Separately mix together the coconut flour, baking powder, salt, and cinnamon. Then blend or mix into wet mixture until well mixed and slightly "fluffy" looking.
Pour into prepared baking dish and bake for 18 minutes. Let cool for a few minutes, then slice and serve with coffee!
Serving Size: Makes 30, 1x2" bars.
