Buckwheat Pancakes

Ingredients
1 1/2 c. Buckwheat Pancake Mix1 c. skim milk1/4 c. egg substitute2 T. oilCooking spray
Directions
Preheat non-stick pan sprayed with cooking spray to medium high. Mix pancake mix, milk, egg substitute & oil until just moistened. Let stand 5 minutes. Pour approx. 1/4 c. batter into hot pan. Cook on one side until edges are brown & bubbles are forming on top. Flip to other side and cook a few seconds more. Remove from pan and top with fresh fruit or light syrup. Enjoy!

    These are good, but I did make some adjustments. I use whole raw organic sour milk and no oil, except on the griddle. I also ground my own whole wheat, and used some organic buckwheat flour instead of a mix. I used stevia for the sweetener, and real organic eggs. It made 7, 73 caalorie pancakes - 10/23/09

    I made these for breakfast and they are good, kindof thick, I added 1/4 more milk and that was better and some blueberries, made them better! - 9/6/08
