Slow Cooker Lentil Dahl - EASY!

Ingredients
2 cups red lentils1 can cubed tomatoes0.25 cup coconut milk1 tsps minced garlic1 inch of ginger root - grated2 tbsp canola oil2 tsp curry powder1/2 tsp dry chili flakes2 cups water1 tsp salt1 cinnamon stick1 bay leaffreshly ground pepper
Directions
1) Mix the oil, garlic, giger, curry, chili together and put in microwave for 30 seconds
2) throw the flavoured oil into the slow cooker with all the other ingredients
3) close lid well, adjust slow cooker to high for about 1.5-2 hours, or until it boils and then put on low to simmer for 3 hours

Serving Size: makes 8 HUGE servings!
