1 teaspoon extra virgin olive oil1 tablespoon red onion, small dice1 slice red ripe tomatoe2 large egg whites1 teaspoon capers, rinsed and chopped1 ounce smoked salmon (lox)1 roll, Arnold 100% whole wheat sandwich thins
1. Heat oil in a small nonstick saute pan over medium heat. Add onion and cook until softened, about 2 minutes.
2. Beat the egg whites and add to the saute pan. Add the capers and cooki, stirring constantly, until whites are set, about 40 seconds.
3. To make the sandwich, layer the egg whites, smoked salmon and tomato on the sandwich thin. Serve immediately.

I toasted a whole wheat English muffin, substituted a tablespoon of finely diced kosher dill pickle for the capers, and doubled the smoked salmon, because that is how I store it in freezer, in 2 oz servings. I paired it w/a small apple & remaining slices from the tomato for a great breakfast!! YUM - 10/30/16
