grilled stuffed portabella mushrooms

Ingredients
7 portabella mushroom caps 1 lb. turkey sausage (browned)1 medium green pepper (chopped)1/2 medium onion (chopped)1 clove minced garlic2 tsp. lemon juice2tbsp. light soy sauce2 tsp. olive oil1/4 tsp chili powder1/4 cup italian seasoned bread crumbs4 tbsp chicken stock low sodium1/2 c. mozerella cheese reduced fat
Directions
remove the stems and gills from mushroom caps. wash tops off of caps lightly. in a small bowl combine 1 tsp. of olive oil, lemon juice and soy sauce. bast the mushroom cap with this and place on grill for 5 mins on each side or until tender.
in a skillet saute green peppers onions and garlic with remaining basting sauce from caps, and 1 tsp. of olive oil and chili powder
when tender add already browned sausage, bread crumbs slowly add chicken stock until crumbly and moist.
place about 1/4 c. of sausage mixture in each cap spinkle with cheese place in oven on baking sheet at 250
until cheese melts cool and serve.

    I did not have lemon juice, green pepper or chicken stock...so I subbed with beef stock and cut up some jar roasted red peppers...I added a slice of pepper jack cheese on top of the other cheese...hubby gave it a 4.99%
