1 large egg, scrambled2 ounces smoked salmon (lox)1/4 medium onion1/4 cup nonfat milk1 pat unsalted buttersalt and pepper to taste
Melt the butter in a frying an over low heat. You only need a small amount of butter for this. Chop the onion and sautee it lightly in the butter. Slice the lox into small rectangles and sautee it as well. It will turn light pink very quickly, which means that it's done. Whisk the egg and the milk together, and add a small amount of salt and pepper for taste. Pour the egg mixture over the onions and lox, and scramble like normal.
