Chicken Broccoli Stew

1 large onion, chopped3 medium carrots, chopped3 medium stalks celery, chopped4 cups chopped broccoli, fresh or frozen1 red bell pepper, chopped3 large potatoes, chopped2.5 lbs boneless, skinless chicken breast, cooked and cut into bite sized pieces4 cups chicken broth1 can cream of chicken soup, prepared
Spray a frying pan with non-stick spray and cook onions, celery and carrots until you can begin to smell the aroma (barely crisp-tender).
Add the bell pepper and broccoli and cook for another minute.
Transfer mixture to a stockpot and add the remaining ingredients. Cook over medium low heat until vegetables are tender.
This stew also works well in a crockpot.
Makes 18 one cup servings.
