Balsamic Chicken with Baby spinach

Ingredients
2 Chicken breasts2 Tbsp olive oil1/4 tsp fresh rosemary1/4 C balsamic vinegar8 oz bay spinach
Directions
Preheat large saute pan on med-hi for 2-3 minutes. Season both sides of chicken with salt & pepper.

Place oil in pan,add chicken & cover. Cook 4-5 min. On each side or until 165° F. Meanwhile, snip rosemary leaves.

Add rosemary & vinegar. Add spinach. Rotate chicken to top of greens & cover. Remove from heat. Let stand 1-2 minutes or until greens are wilted. Serve.
