Spicy Thai Peanut Noodles

1/2 cup reduced fat peanut butter1/2 cup cilantro, chopped1/4 cup warm water1/4 cup sweet chili sauce1/4 cup lime juice2 Tbsp rice vinegar1 Tbsp dark brown sugar1 tsp dried ginger2 tsp light soy sauce1 tsp sesame oil2 tsp sriracha hot chili sauce1 Tbsp minced garlic8oz whole wheat angel hair or spaghetti noodles2/3 cup carrots, julienned or shredded2/3 cup red bell pepper, julienned2/3 cup snow peas, julienned1 Tbsp vegetable broth
Place first 12 ingredients (peanut butter through garlic) in a blender or food processor. Puree until smooth and set aside.
Heat the vegetable broth over medium-high heat. Add the vegetables, season lightly with salt and black pepper if desired, and saute for 3-4 minutes, until tender crisp. Set aside.
Cook noodles according to package directions. Drain the noodles and return to the pot. Toss with peanut sauce and veggies.
