Shay's Vegi (TVP) Lasagne

Pasta, Lasagna Noodles, 8 oz Sauce, Prego Marinara Sauce, 2 cupMushrooms, fresh, 2 cup, pieces or slices Zucchini, 2 cup, sliced1/2 Cup Fresh Basil, finely choppedBoca Meatless Ground Burger, 4 serving (2PKS)Onions, raw, 1 cup, choppedGarlic, 1 tsp 2 cans diced tomatoesSpinach, fresh, 6 cupSoy Cheese, 8 oz (shreded)
Pre-boil 9 lasagne noodles (al dente).
Pre-heat oven to 350. Using a 13x9 baker, line the bottom with a thin coat of prego. Shred the cheese, set aside.
Saute onions and garlic, add fresh basil. When translucent, add zucchini, mushrooms and TVP. When TVP is heated, add all 6 cups of spinach and dump the two cans of tomatoes right on top.
Cover, simmer for 5-6 minutes until spinach begins to cook down. Remove from heat and turn mixture to complete cooking down the spinach.
Layer 3 noodles over the Prego, coat with vegetable mixture. Sprinkle 1/3 cup cheese over mixture, add more Prego, cover with 3 more noodles repeat until all 9 noodles are used. Add more prego to thinly cover the top, spread the remaining cheese on top.
Cover with foil and bake at 350 for 30 minutes. Remove, let stand, covered for at least 10 minutes. Cut and serve warm with salad.
