Ingredients
1 C HELLMAN'S(r) or BEST FOODS(r) Real Mayonnaise2 T vinegar (I like rice vinegar)1-1/2 t salt1 t sugar or Truvia1/4 t ground black pepper5-6 C cauliflower florets steamed, but not too soft1 C celery, sliced or diced1/2 C onion, chopped2 eggs, hard-cooked and chopped
Directions
In large bowl combine mayonnaise, vinegar, salt, sugar, and pepper. Add cauliflower, celery, onion, and eggs, toss to coat well. Cover; chill.

    Nearly identical to BH&G potato salad recipe (1961 Salad Cookbook). Try light mayo. No change in taste or texture! Optional: 1 1/2 tsp celery seed, a nice addition if you have it on hand. Also, 2 T sweet pickle relish; adjust NI if you add this. Final hint: mix with warm cauliflower to blend flavor - 7/26/14
