LOW FAT BANANA BREAD

Ingredients
1/3 cup egg beaters3/4 cup Splenda1 cup smashed ripe bananas2 tbsp applesauce1 tbsp vanilla extract1/2 tbsp banana extract (optional)1 3/4 cups wheat flour2 tsp baking powder1/2 tsp baking soda1/2 tsp salt1/2 cup lowfat buttermilk
Directions
preheat oven to 325. spray a loaf pan with flour baking spray. Mix eggs and sugar. Add in smashed bananas, buttermilk, applesauce and extract(s). add in dry goods- beat until blended. Pour in pan, place in oven, bake 50 minutes/ until top is golden brown/ a toothpick inserted into center comes out clean. Remove from bread pan & cool on rack. Makes 1 loaf/ 10 1-slice servings.

    Honestly, I can't figure out how it got a 5-star rating. I just didn't consider it that good. A little to flavorless for me. Also turned out too spongy. Maybe adding some spices would help? I won't be throwing it out, though. It's definitely edible. - 4/3/10
