South Beach Phase 1 Lentil Soup

1 medium onion, chopped1 cup or 1/2 a package frozen spinach2 cloves garlic, minced1 3/4 cup lentils3 veggie bouillon cubes
Place a small amount of water in a stock pot and sautee onions and garlic in it (great tip for not using oil). When somewhat soft, add in frozen spinach and cook until thawed.
Rinse lentils and add to pot and stir for a minute or two. Pour in water, add bouillon cubes and cook for about 30-40 mins or until lentis are soft. SO TASTY.
