2 Tablespoons Oat Bran (Quakers milled fine, very good)2 Tablespoons (1 oz.) Greek Non Fat Vanilla Yogurt (I used Chobani, any flavor can be used)1 Egg White1 packet Splenda or other sugar sub (optional)Non stick cooking sprayOptional: Add a little cinnamon or vanilla to mixture for added flavor.
Mix all ingredients in 1 cup measuring cup that has a pourer.
Heat fry pan, spray with non stick cooking spray.
Pour mixture into pan, spreading it to make 5-6 inch pancake. Cover. Cook until top looks dry. Flip. Cook underside til brown. Slide onto plate.
Serving Size: Makes one 5-6 inch pancake
