Whole Wheat Sweet Muffin

Ingredients
2 c. whole wheat flour1/2 tsp. salt3 tsp. baking powder1/2 c. Egg substitute (2 egg equivalent)1 c. nonfat milk1/4 c. brown sugar packed2 tbsp. melted butter
Directions
Combine dry ingredients in a medium bowl. Combine wet ingredients in a separate small bowl. Mix all together until just moist. Scoop into paper lined or greased muffin cups. Bake at 375 for 20 minutes.

Note - I've added in 1/2 c. of finely chopped apple or 1/2 c. mini chocolate chips for variations and love both. Experiment with fruit that you like...dried cranberries, raisins, etc.

These freeze well for up to two months!
