3 cups whole wheat penne pasta,1 pound ground turkey1 -28 oz can whole tomatoes, drained and broken up1 large chopped onion4 cloves minced garlic2 tsp olive oil2 tsp oregano1 cup part skim ricotta cheese1 cup part skim ricotta cheese3/4 tsp salt1/2 tsp pepper
preheat oven to 350 degrees. Spray 9x13 baking dish with non-stick cooking spray. prepare penna pasta according to box directions, drain and set aside in large bowl. At the same time in large skillet or non-stick dutch oven, heat olive oil over medium heat. Add turkey and cook until brown. Add onions and garlic, cook until soft (3 minutes). Add salt, pepper, and tomatoes. cook approx 8 minutes until sauce appears a bit thicker, stirring occassionally. Add oregano. Stir. Add turkey mixture to pasta in bowl. Add ricotta cheese and 1/2 of mozzarella cheese. Stir to mix in cheese. Pour into baking dish. Sprinkle with remaining mozzarella cheese. Bake for 30 minutes.
