2 boneless, skinless chicken breastsMarinade:1 piece ginger root1/2 small onion, diced2 tbsp olive oilJuice of 1 lime1 tbsp. chili powder1 tbsp. cuminred pepper to your spice tastesSauce:1 whole onion, diced2 tbsp. garlic2 tbsp. cider vinegar2 tbsp. olive oil1/2 cup skim milk1/2 cup sour cream1 cup chicken broth2 tbsp. chili powder2 tbsp. cuminred pepper to your tastes
Mix all ingredients for the marinade in a blender and marinate the boneless, skinless chicken breast in the fridge with turning at least one hour to overnight. In a large frying pan, add olive oil, garlic and onion and cook until onion is translucent. Add vinegar, chicken broth, milk and sour cream. Simmer 5 minutes. Add spices and green beans and cubed chicken. Simmer 25 minutes or until chicken is cooked through. Serve over rice or noodles.
