Lentil Socca

Put one cup of rinsed lentils and 1 cup of water in the blender. Blend until lentils are halved, at least. Add a bit of oil to the pan, and add the lentil batter.
When flipping the lentil flatbread the first time, once the water is mostly boiled off, I add a bit more oil under the bread to get that crispy texture.
The recipe calculation is for four tsp oil. Less can be used.
Serve with Turkish salad, hummus, or other toppings of choice! Very filling and full of fiber and protein.
