Spaghetti Squash in meat sauce

1 whole spaghetti squash1 can or jar of marinara sauce1 pound of extra lean ground turkey1/2 cup parmesan cheese
Makes 4+ servings
Cut squash in half and bake face down in 1/4 inch of water at 350 for about 40 minutes. Flip over and bake an additional 15 minutes.
Meanwhile, cook meat in skillet over medium heat until brown. Add pasta sauce and simmer until squash is done.
Remove squash from oven and allow to cool for a few minutes. Then, scrape squash with a fork from its outer shell into a bowl. Stir in parmesan cheese, then top with meat sauce.

I tried this and loved it. I used a spaghetti sauce from a can and then spiced it up with garlic, basil and oragino. then i served it up on a plate and ate it. i also did toast a piece of bread and put some butter and garlic on it. overall this is very healthy as you are getting a lot of veggatatble - 10/13/07
