Sweet Potato Soup (adapted from Happy Herbivore)

1 medium sweet potato1 c unsweetened almond milk1 c water1 c Wegmans Vegetable Stock1 tsp garam masala1 tbsp curry paste1 medium onion, chopped3 cloves garlic, minced1 tsp ground cinnamon
Cook sweet potato in microwave for 5 min. Remove skin, cube and place into blender.
Saute onion and garlic over medium-high heat in a thin layer of water, until translucent/fragrant. Add stock, spices (except cinnamon), and water.
Transfer to blender and add almond milk. Blend until smooth. Add more water/milk if necessary. Pour back into pot and heat thoroughly.
Sprinkle with cinnamon before serving.
