Homemade Meatloaf

Ingredients
1-2 lbs Ground Beef (85% or leaner)1 c grated carrots1 c chopped onion1 lrg egg1/2 c breadcrumbs1/2 c milk (your choice-I use whole)16 tbsp ketchup (10 tbsp reserved)1/2 c brown sugarSalt and pepper to taste
Directions
mix all ingrediants except brown sugar and 10 tbsp ketchup. Crumple tin foil on bottom of cooking pan to hold meatloaf higher than fat drippings. Place loaf on foil "mound." Bake at 400 for 35-45 mins. Half way through baking, mix remaining ketchup and brown sugar to form sauce. Either pour over top of loaf and finish baking or sauce individual servings with a tbsp or two.
