Shrimp Fried Rice, Faux Style, Low Carb

Ingredients
1 Onion, diced2 or 3 cloves of garlic, minced1 head of Cauliflower grated (it's the rice)12 oz. precooked shrimp3 eggsginger1/4 c. soy sauce (or to taste)Smart Balance Buttery Light SpreadPure Almond Milk Unsweetened1/4 C, shredded carrots
Directions
Saute diced onions in smart balance until soft. Add carrots and sautee a minute or two longer. Add grated cauliflower and shrimp. Sautee until cauliflower is soft and shrimp is hot. Add ginger and soy sauce.
In the meantime, scramble 3 eggs with 3 tbsp of skim milk or Silk Almond Milk. Add to saute mixture. Faux Shrimp Fried Rice. Delicious and healthy!!!!
