Red Lentils & Green Onions

Ingredients
2 green onions chopped2 tsp. olive oil1/2 cup uncooked small red lentils1/4 cup dry roasted peanuts1-1 1/2 cups water
Directions
Sautee the green onions in a small cooking pot over medium heat. Add one cup of water, the red lentils, and the dry roasted peanuts. Stir. Allow the mix to come to a simmer, stirring every so often till the water is absorbed. Taste to see if the lentils are softened to the point of being softer yet slightly chewy. If necessary add more water. Season to taste.
