1 zucchini, halved and sliced1 beefsteak tomato, sliced into 3/4" wedges1 jalapeno, seeded and chopped1/2 cup shelled edamame, cooked and chilledchopped fresh basil to tastesalt and pepper to taste
prepare vegetables as noted, put in bowl and toss with basil, salt, and pepper. serve over spinach or as a side with chicken
