Orzo with Crab and Artichoke

2 cans Artichoke hearts in water3 Tbsp Cider Vinegar1 Shallot coarsely chopped 2 cloves garlic1 tsp Dijon mustard2 large basil leaves.5 tsp dried oregano1.5 Tbsp extra virgin olive oil1 lbs. orzo (whole wheat or flavored)1 lbs. imitation crab meat, chunk style or real3 roma tomatoes, chopped2 tbsp chopped fresh parsley
makes 18 - .5 cup servings
bring large pot of water to boil. coarsely chop one can of artichoke hearts and set aside, other can drained into blender. add vinegar, shallot, garlic, mustard, basil and oregano, season with salt and pepper. turn on blender and gradually add oil until dressing emulsifies; set aside. boil orzo until al dente, about 8 minutes. drain, rinse with cold water, rinse again and transfer to bowl. add crabmeat, tomatoes, parsley, reserved chopped artichokes and dressing. toss.
