Crab Cake Burgers

8 oz lump crabmeat1 lg egg white1 cup panko bread crumbs1/2 Bob's Red Mill ground flaxseed meal1/2 cup Walden Farms Mayo (no calorie, no fat)2 shallots, finely chopped (I use green onions)2 Tbsp lemon juice2 Tbsp chopped fresh tarragon (or 1 Tbsp dried)2 Tbsp chopped fresh chives
Mix the panko bread crumbs and flaxseed meal together. Combine crabmeat, egg white, 1/4 tsp black pepper, 1/2 cup of the bread crumb/flaxmeal mixture, 1/4 cup of mayo, half of the shallots and 1 Tbsp each of the lemon juice, tarragon and chives. Form into 4 patties. Coat in remaining panko/flaxmeal mixture.
Mix 1/4 tsp black pepper, and remaining 1/4 cup mayo, shallots, and 1 Tbsp lemon juice, tarragon, and chives for sauce.
Brown the patties in nonstick pan sprayed with cooking spray over medium heat 3 min per side. Serve plain or on your choice of buns and top with sauce.
