Ingredients
Chicken Breast, no skin, 6 ounces -cookedCelery, raw, 1 stalk, large (11"-12" long) Onions, raw, .5 cup, chopped *Summer Squash, 1 cup, sliced Okra, 1 cup slices Vegetable Broth, 2 cup Garlic, 2 clove Red Ripe Tomatoes, 1 plum tomato Carrots, raw, .5 cup, chopped *Cumin seed, 1 tspLime Juice, 1 fl oz Jalapeno Peppers, .5 pepper *Whole Wheat Tortilla, 1 serving Olive Oil, 1 tbsp Cilantro .5 cup chopped*Snap peas, .5 cup 4 Waterchestnuts
Directions
Saute all vegetables in oil
Add broth, cumin, and chicken chopped
Simmer 10 min.
Add lime, and cilantro
Top with baked whole wheat tortilla strips
