Diabetic-freindly chocolate morsels

Unsweetened Cocoa Powder - 1/2 cup plus 2 tbspSplenda original - 1/4 cup.Coconut oil - 4 tbspVanilla or imitation vanilla - 1 tsp.
Using a DOUBLE BOILER, fill the bottom pan halfway with water, set on stove to boil.
Measure out ALL of your ingredients while waiting. (Eliminates the chance of scorching.)\
One the water has come to a rolling boil, put your glass dish or the second part of your double boiler on top, TURN THE HEAT OFF.
Put the oil in to melt(If using a coconut oil shortening.) or to warm up(If using oil, oil.), once warm, pour in splenda, make sure splenda dissolves well. Pour in Cocoa powder, this will not want to dissolve, but keep stirring.
And the vanilla is actually optional, but i like it, so throw a tsp of that in there before removing from heat, and stir it about.
Place in another container that is shallow, wide, and flat, do not cover. Place this container in your freezer to chill the chocolate.
One cooled and solid, chop up into chips :D
